Healtier - Giant Ginger Spice Cookies


Festive season... always bring lot's of good things and warm feeling each time they come each year. 
Even followed with busy things to do such as... grocery list - baking madness - gift warping - holiday sale rush - guests - house decorated - craft - menu listing - travel planning - decision made and exhaustion... which in my part is the low blood-pressure "visit... 
but all the list above is paid off when we put the two word side by side : "Christmas Joy"
That's why this kind of season will always be the most wanted and eagerly waited by many people in the whole world... Don't you agree? :)


Gingerbread cookies is one of my favorite and always remembering me of christmas...
Every country have their own way to make a gingerbread. There's made as a cake, cookies and even bread.
Even since a long time ago this kind of cookies is a trending when christmas come. Everyhouse hold make their own version of ginger cookies. Decorated or not decorated - Icing - sprinkle with sugar - colored and made with different shape. And every year in some country the race was held to make the most creative and elegant gingerbread house.

Ingredients :
  • 1 1/2 cup Organic Whole Wheat Flour 
  • 1 cup Unbleached All Purpose Flour
  • 110 gram Unsalted Butter, room temperature
  • 1/4 cup Canola Oil
  • 1/2 cup Light Brown Sugar
  • 1/3 cup Granulated Sugar, plus 1/4 for coating
  • 3 tbsp Honey 
  • 1 large Egg
  • 1/2 tsp Salt
  • 2 tbsp Ground Ginger
  • 1 tsp Ground All Spice
  • 1/2 tsp Ground Black Pepper
  • 4 tbsp chopped Chrystilized Ginger

Directions :


  • Line the baking sheets with parchment papper, set aside. 
  • In a bowl whisk together the dry ingredients until just combine, set aside.
  • Cream butter, brown sugar, 1/3 granulated sugar and with a mixer.
  • Beat in honey and egg.

  • Low the speed, stir in the flour mixture 1/4 part at a time, mix again until just combined.

  • Flatten the dough and wrap with plastic and put on the refigerator for 20 minutes. 
  • Preheat oen to 175C or 350F.
  • Devide the dough into 24 part and make a ball shape each. 

  • Place the remaining 1/4 granulated sugar in a plate, roll ball into the sugar until coat (as desire). 
  • Place the ball on the baking sheet about 3-inches apart.

  • Flatten with your kitchen tools or a flat wooden spoon. 
  • Sprinkle with sugar if you want your cookies more sweet (optional).
  • Bake until brown with rack in lower third for 10-12 minutes.
  • Cool the cookies in a wire kitchen rack.
  • Store for 2-3 week on an air-tight container.
  • Enjoy! ;) 

The Joy of Christmas not only belonging to sweet or savory cookies and dishes, it is belong to the spicy and aromatic flavor also.
When we celebrate the Christmas Joy that means we shout "The Saviour Has Born!" and we rejoice!


Christmas Joy not only represent with sweet taste...
sometimes it can be a bitter taste like Truffles, a soft and rich texture like Pudding, a refreshing one like Punch, a hot one like Chocolate Drink, an elegant one like Turkey Wellington or an ordinary one with a little bit spicy and aromatic flavor like this giant ginger spice cookies!

Every dish can be serve and gifted to celebrate the christmas joy...
the most important thing is don't forget your love ones and the truth meaning of christmas it self :)
