Healthy Green Peas Soup



I think everyone who loves bean & nuts will surely love this soup - I'm pointing the finger to my self  :D
I been cooking a variety of green bean soup & all of them makes me fall in love more! 
Well... I in love with peas... and all kind of beans... and nuts... and Ohh all of them actually! LOL 
I "named" this soup Healthy Green Peas Soup coz it doesn't need a cream of heavy cream on the recipe. Even if I use sour cream as a garnish and sometimes with yogurt if have in my refrigerator topped with a crunchy smoked beef & a dash of evoo - I think this soup still in the category of healthy :)


let's check the refrigerator & start to make it! ;)



Ingredients:

  • 2 cup frozen Green Peas
  • 2 cup Chicken Stock
  • 1 cloves Garlic, slice
  • 1/2 medium Onion, chopped
  • 2 sheet Smoked Beef 
  • Ground Black Paper, for garnish
  • 1 medium potato, slice in cubes
  • Evoo
  • 1tsp low fat Butter 
  • 1 tsp Yogurt / Sour Cream, for garnish 


Directions:
  • Add 1 tbsp of evoo on a skillet. Saute the garlic and onion until the onion is softer.
  • Add 2 cups of chicken stock, green peas and potato - shimmer for about 5 minutes or until the potato is soft.
  • Slice smoked beef or chopped roughly.
  • Add to the non-skillet pan with 1 tsp of butter.
  • Fry until lightly crisped. Remove from oil & put in a plate covered with kitchen towel.
  • Lift the soup from heat, let it rest about 5 minutes so it's won't "explode" on the food processor.
  • Add the soup into food processor & puree until smooth.
  • Serve warm : shimmer about a minutes on low heat
  • Serve cold : Put in the refrigerator & let it chilled 
  • Garnish with 1tbsp of yogurt or sour cream, topped with crispy smoked beef, sprinkle of ground black paper & dash of olive oil.
  • Enjoy! ;) 
The result is a sweet soup! I in love more with this bean! :) 
I had this soup today as a breakfast, and store the rest for dinner tonight - served chilled! ;)
And I enjoy it with garlic bread  or u can enjoy it with any toast bread you have at home.

That's my power breakfast today!

  6. Hmmm this reminds me of my Wednesday soup day at my company's cafeteria. I think Wednesday is pea soup day and I was hooked on it.... And I never had pea soup before that too. So I know what you mean! This looks good....and your photo is very good. I'd love to have it with garlic bread!
